This Tahini Curry Sauce is a staple at Realm Food Co. in Parksville, and is extremely addictive. It can be used as a marinade for chicken before tossing it on the grill (or afterwards), as a sauce for sauteed vegetables, tossed with pasta or as a salad dressing on your favourite mixed greens. It is also excellent as a sauce on your own personal version of “Buddha Bowls”.
Makes 4 cups
INGREDIENTS
- 1 ½ cups Tahini
- 3 cups water
- 4 cloves garlic
- 4 Tbsp fresh lemon juice
- 2 tsp salt
- 3 Tbsp maple syrup
- ½ tsp black pepper
- 2 Tbsp of your favourite curry powder
- 1 tsp turmeric powder
METHOD
Combine all ingredients in a blender and mix for 2 mins, until smooth. Serve on your favourite salad, grilled vegetables, chicken or fish.
Store in the refrigerator for up to 1 month.
